Tasty Tuesdays!

With summer quickly approaching in just a short couple of weeks, I wanted to share one of my favorite dessert's.  I've made this recipe many times before with praise as a nice ending to a meal.

With berries in peak season, it's a great dessert to serve at this time of the year.  Also, the following recipe is delicious and an easy version of this treat to make.  The macerated berries to serve on top of the panna cotta takes this dessert to an entirely different level of goodness!


Vanilla Bean Panna Cotta & Macerated Berries
(adapted from Food & Wine)





Ingredients:
  1. 1  quart of heavy cream
  2. 1/2 cup sugar
  3. 1/2 vanilla bean, split lengthwise, seeds scraped
  4. 2 1/4 teaspoons unflavored powdered gelatin
  5. 3 tablespoons water
  6. Mixed berries, for serving

Method:


In a medium saucepan, combine the cream, sugar, vanilla bean and seeds. Bring the mixture just to a simmer over moderate heat. Remove from the heat, cover and let steep for 15 minutes.


Meanwhile, in a small bowl, sprinkle the gelatin over the water and let stand until evenly moistened, about 5 minutes.




Uncover the cream mixture and bring just to a simmer over moderately high heat. Remove from heat, add the gelatin and stir until dissolved. Remove the vanilla bean and save for another use. Pour the panna cotta mixture into eight 4-ounce ramekins and let cool to room temperature. Cover with plastic wrap and refrigerate until the panna cotta is set but still jiggly, at least 3 hours. Serve in the ramekins, with berries.












Berries:
  • Strawberries
  • Blueberries
  • Raspberries 
  • Blackberries

Ingredients :

4 cups fresh of combination of mixed berries
3/4 cup sugar
1/4 cup fresh orange juice
3 tablespoons Grand Marnier (optional) 




Method:
Mix all ingredients together and refrigerate 3 hours to overnight.
