BBQ Sweet Potato & Black Bean Tacos



BBQ Sweet Potato & Black Bean Tacos with Avocado Cream



Peeled Sweet Potatoes 


Sautee sweet potatoes 


From Counterclockwise: black beans, BBQ sauce, sweet potatoes (center)
 chopped onions, avocado cream


Corn tortilla tacos 


Recipe:
Serves 4

Ingredients:
*2-3 sweet potatoes
*1 small yellow onion
*1 can of organic, no salt added black beans
*Organicville tangy BBQ sauce (or similar brand)
*Cayenne pepper
*Cumin
*Garlic Powder
*Garlic clove 
*Salt
*Pepper
*Cilantro
*1 Avocado
*Fage 0% greek yogurt 

Method:

Sweet Potatoes and Onions:
1. Peel 2-3 sweet potatoes then bring water to a boil
2. Cook potatoes until you can pierce with a fork and cut into small cubes 
3. Add 3/4 cup of chopped onions to pan and sautee until soft
4. Add chopped sweet potatoes to pan
5. Add BBQ sauce
6. Let all ingredients simmer on low heat 

BBQ Sauce:

3 tbsp. tangy BBQ sauce (I used Organicville) 
1/8 tsp. cayenne pepper 
1/4 tsp. cumin
1 tbsp. olive oil 
2 tbsp. room temperature water (to thin mixture) 

*whisk all ingredients 

Black Beans:
1. In a separate pan add small amount of olive oil or cooking spray 
2. Add black beans, cilantro and garlic powder to taste
3. Sautee, until beans are warmed 


Avocado Cream:
1 avocado
1 1/2 tbsp. cilantro
2 1/2 tbsp. fage greek yogurt (0%) 
1 garlic clove 
salt and pepper to taste

*mix all ingredients well in a food processor 

Corn Tortillas:
Warm corn tortillas on a baking sheet at 250 degrees until warm but still pliable 

For Serving:
Spoon black beans, followed by bbq sweet potato & onion mixture onto corn tortillas, and top with the avocado cream
