Watermelon Cups with Feta and Basil

I absolutely love when watermelon and feta are paired together...the sweet and refreshing taste of watermelon really brings out the saltiness of the cheese....

These watermelon "cups" are a perfect way to enjoy this delicious flavor combination and make for a great summer appetizer....




Ingredients:
1 seedless watermelon
Feta cheese
Fresh basil
1 Tbsp Olive oil
Salt & Pepper

Method:
Cut watermelon into 1" cubes
Scoop a little bit off the top of each cube so you have a "cup"

Mix feta, finely chopped fresh basil leaves, 1 Tbsp olive oil, salt and pepper to taste.  Add a small spoonful of the mixture to the watermelon "cups".

Top with a drizzle of balsamic vinegar (optional)
