A Thursday Treat

I had a ton of strawberries in my fridge the other day and decided I would use some of them to make strawberry shortcake! 

Summer desserts should be light and incorporate some of the delicious fruits that are in season.  I thought what better time than now to make this classic recipe to share with all of you! 

This dessert is simple to make and doesn't require much baking time... so there's no need to worry about sweltering in your kitchen on a hot day in front of the oven.  

To make this treat even more quick and easy I opted to use Bisquick's Gluten-Free Mix and the results were absolutely delicious.





Gluten-Free Biscuits






The small amount of ingredients needed





Fresh cut strawberries... 





Mixed with sugar






Homemade whipped cream 
(way better than from a can... and really easy)





Strawberry shortcake! 



Ingredients:
(*If you're not making them gluten-free use original Bisquick and recipe, here for the mix
1/2 cup of sugar
1/2 cup of butter
3/4 cup of milk 
3 eggs
1 1/2 teaspoons of vanilla 
4 cups of sliced strawberries 

1 cup of heavy cream
1 tablespoon confectioners sugar 
2 teaspoons of vanilla 

Recipe:

Strawberries:
Mix the 4 cups of sliced strawberries with 1/4 cup of sugar and 2 teaspoons of vanilla.  Put aside in fridge for 45min-1hr. 

Biscuits:
Heat oven to 425 degree and grease cookie sheet. Combine 2 1/3 cups of Bisquick mix, softened butter, 3/4 cup of milk, 1/4 cup of sugar, 3 eggs and 1 1/2 teaspoons of vanilla. Mix all ingredients together well. 

Then bake for 12min or until tops of biscuits are nicely golden brown.  Allow biscuits to completely cool, 5-10min. 

Whipped Cream:
While the biscuits are cooling mix together 1 cup of heavy whipping cream, 1 tablespoon of confectioners sugar and 2 teaspoons of vanilla into a free standing mixing bowl on medium speed.  Mix until the cream begins to stiffen and "peak".  Make sure to not over mix or it will get lumpy and watery!  
(Note: if you don't have a free-standing or electric mixer you can also use a wire whisk) 

Assembly:
Cut each biscuit in half, then spoon on whipped cream to bottom half...followed by the sliced strawberries and then another layer of the cream and finish by placing the other half of the biscuit on top.  Serve and enjoy!
