Happy July 4th!!

What are your plans to celebrate our country's Independence?  I plan on taking a drive up the coast and enjoying the fireworks over the Bay tonight!  I hope all of you enjoy your day off and spending time with family and friends...and of course a good BBQ!

Potato Salad

What's a BBQ without potato salad? Here's an easy recipe if you still need to make something last minute for your 4th of July celebration tonight!


Ingredients

  • 3 pounds potatoes, peeled and sliced
  • 1/2 cup chopped onion
  • 2 teaspoons salt 
  • 1/2 cup mayonnaise
  • 1/4 cup vegetable oil 
  • 1/2 cup cider vinegar
  • 2 tablespoons white sugar
  • 2 tablespoons dried parsley
  • ground black pepper to taste

Method
Cook potatoes until you can pierce with a fork and slice into thin circles.  Then simply mix all ingredients together and your done! Just put in the fridge until ready to serve!

Lastly, how can you celebrate at a real 4th of July BBQ without a hot dog? Of course don't forget the necessary condiments like Heinz ketchup and mustard
